- 1 lb ground beef (or a mix of beef + pork)
- 1/4 cup Italian breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp onion powder
- Salt & pepper to taste
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, peeled and chopped
- 3 cloves garlic, minced
- 6 cups beef or chicken broth
- 1 (14 oz) can diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1 cup uncooked pasta (ditalini, elbow, or shells)
- Fresh parsley, chopped
- Extra Parmesan for topping
- Mix & Roll the Meatballs: Combine ground meat, breadcrumbs, egg, Parmesan, garlic, and seasonings in a bowl. Roll into small meatballs.
- Sear the Meatballs: Heat olive oil in a large pot. Brown the meatballs until golden on all sides.
- Sauté the Veggies: In the same pot, add onion, carrots, and garlic. Cook until softened and fragrant.
- Build the Broth: Pour in broth, diced tomatoes, oregano, and red pepper flakes. Stir in browned meatballs and bring to a gentle simmer.
- Add Pasta & Finish: Stir in pasta and cook until al dente. Top with fresh parsley and extra Parmesan.
Notes
- This soup can be made ahead of time and reheated.
- Feel free to add other vegetables like spinach or zucchini.
- Adjust the spice level by adding more or less red pepper flakes.
