A cozy and hearty Italian meatball soup that is perfect for family dinners.

Ingredients

  • 1 lb ground beef (or a mix of beef + pork)
  • 1/4 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 6 cups beef or chicken broth
  • 1 (14 oz) can diced tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup uncooked pasta (ditalini, elbow, or shells)
  • Fresh parsley, chopped
  • Extra Parmesan for topping

Instructions

  1. Mix & Roll the Meatballs: Combine ground meat, breadcrumbs, egg, Parmesan, garlic, and seasonings in a bowl. Roll into small meatballs.
  2. Sear the Meatballs: Heat olive oil in a large pot. Brown the meatballs until golden on all sides.
  3. Sauté the Veggies: In the same pot, add onion, carrots, and garlic. Cook until softened and fragrant.
  4. Build the Broth: Pour in broth, diced tomatoes, oregano, and red pepper flakes. Stir in browned meatballs and bring to a gentle simmer.
  5. Add Pasta & Finish: Stir in pasta and cook until al dente. Top with fresh parsley and extra Parmesan.

Notes

  • This soup can be made ahead of time and reheated.
  • Feel free to add other vegetables like spinach or zucchini.
  • Adjust the spice level by adding more or less red pepper flakes.
