  • 1 baguette or Italian loaf, sliced into ½-inch pieces
  • 2 cups cherry tomatoes, diced
  • 1 cup fresh mozzarella, sliced or shredded
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze (plus more for drizzling)
  • 1 clove garlic, halved
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F. Place sliced baguette on a baking sheet, brush with olive oil, and toast for 5–7 minutes until golden and crisp.
  2. While still warm, rub each toast slice with the cut side of garlic.
  3. Layer each slice with fresh mozzarella. Optionally, melt it slightly in the oven for 1–2 minutes.
  4. In a bowl, toss diced tomatoes, chopped basil, olive oil, salt, and pepper. Spoon this mixture over the mozzarella.
  5. Finish with a drizzle of balsamic glaze and an extra sprinkle of basil before serving.

  • For a more intense flavor, let the tomato mixture sit for a few minutes before topping the bruschetta.
