3 ripe avocados, halved and pitted
1/2 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp honey
1 tbsp sriracha
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt and pepper, to taste
1/4 cup cilantro, chopped
2 tbsp spicy mayo or chipotle aioli
Pinch of red pepper flakes (optional)
Instructions
Toss shrimp with olive oil, honey, sriracha, garlic powder, paprika, salt, and pepper. Sear in a hot skillet until charred and juicy.
Halve and pit the avocados. Scoop out just a little to make a “well” for stuffing.
Fill each avocado half with 2–3 shrimp.
Drizzle spicy mayo or chipotle aioli over the top.
Sprinkle chopped cilantro and a pinch of red pepper flakes for garnish.
Notes
Adjust the amount of sriracha to control the spice level.
For a creamier texture, add more spicy mayo or aioli.
These can be served as an appetizer or a light lunch.
