  • 2 sheets puff pastry, thawed
  • ½ cup chopped pecans
  • ¼ cup whole pecans (for topping)
  • ¼ cup honey
  • 3 tablespoons brown sugar
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra honey, for drizzling

Instructions

  1. Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. In a small bowl, mix melted butter, honey, brown sugar, cinnamon, vanilla, and salt.
  3. Roll out puff pastry sheets on a lightly floured surface. Brush generously with the honey mixture.
  4. Sprinkle chopped pecans evenly over the pastry.
  5. Roll tightly into logs and slice into 2–3 cm (1-inch) swirls.
  6. Place swirls cut-side up on the tray. Press a whole pecan gently into the center of each.
  7. Bake for 18–22 minutes until deeply golden, puffed, and caramelized.
  8. While warm, drizzle with extra honey. Cool slightly before serving (if you can wait 😉).
