6 bone-in, skin-on chicken thighs
Salt and freshly ground black pepper, to taste
1 teaspoon paprika
1 teaspoon garlic powder
2 tablespoons olive oil
1/3 cup honey
1/2 cup fresh orange juice
Zest of 1 orange
2 tablespoons soy sauce
3 garlic cloves, minced
1 tablespoon fresh thyme leaves (plus extra sprigs for garnish)
1 tablespoon Dijon mustard
1 orange, sliced into rounds
Instructions
Preheat oven to 200°C (400°F). Pat chicken dry and season with salt, pepper, paprika, and garlic powder.
Heat olive oil in a large oven-safe dish or skillet over medium-high heat. Sear chicken skin-side down for 4–5 minutes until golden and crispy. Flip and cook for 2 minutes more.
In a bowl, whisk together honey, orange juice, zest, soy sauce, garlic, thyme, and Dijon mustard.
Pour the sauce around the chicken and arrange the orange slices on top.
Transfer to the oven and bake for 25–30 minutes, basting once or twice, until the chicken is cooked through and the glaze thickens.
Broil for 2–3 minutes at the end for a sticky caramelized finish.
Spoon pan sauce over chicken and garnish with fresh thyme before serving.
Notes
Let chicken rest for 5 minutes before serving.
Use fresh orange juice for the best flavor.
Add a pinch of chili flakes for heat.
If the sauce is thin, simmer on the stovetop for 3–4 minutes to reduce.
