A fresh and flavorful dinner featuring grilled honey lime chicken served with avocado, rice, and fresh toppings.

Ingredients

  • 2 boneless chicken breasts
  • 2 tbsp olive oil
  • Juice of 2 limes + zest
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 cup jasmine rice (or white rice), cooked
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 2 tbsp chopped cilantro
  • Salt & pepper to taste
  • Lime wedges for serving

Instructions

  1. Marinate the chicken in lime juice, honey, garlic, chili powder, olive oil, salt, and pepper for at least 30 minutes.
  2. Grill or sear the marinated chicken until charred and cooked through.
  3. Mix cherry tomatoes, red onion, cilantro, and a pinch of salt. Slice avocado.
  4. Layer rice, grilled chicken, and avocado-tomato mix in a bowl or ring mold.
  5. Drizzle extra marinade or honey-lime glaze over the stack. Garnish with lime wedges and cilantro.

  • For extra flavor, marinate the chicken overnight.
