1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 tbsp brown sugar
3 (8 oz) cream cheese blocks, softened
3/4 cup granulated sugar
1/4 cup honey
2 tbsp lemon juice
1 tbsp lemon zest
3 large eggs
1 tsp vanilla extract
1 cup toasted pecan halves
1/4 cup honey
1 tbsp lemon juice
Instructions
Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and brown sugar. Press this mixture into a 9-inch springform pan and bake for 10 minutes. Allow to cool.
In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, honey, lemon juice, lemon zest, and vanilla extract. Mix well. Beat in the eggs one at a time until fully incorporated. Pour this filling over the cooled crust.
Bake the cheesecake in a water bath for 50–60 minutes, or until just set. Turn off the oven and leave the cheesecake inside for 1 hour to cool. Then, chill in the refrigerator for at least 4 hours or overnight.
For the topping, warm the honey with lemon juice. Pour this mixture over the chilled cheesecake and then top with toasted pecans.

Add lemon slices or edible flowers for an elegant presentation.
For a vegan option, substitute with dairy-free cream cheese and maple syrup.
