  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tbsp brown sugar
  • 3 (8 oz) cream cheese blocks, softened
  • 3/4 cup granulated sugar
  • 1/4 cup honey
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup toasted pecan halves
  • 1/4 cup honey
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and brown sugar. Press this mixture into a 9-inch springform pan and bake for 10 minutes. Allow to cool.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, honey, lemon juice, lemon zest, and vanilla extract. Mix well. Beat in the eggs one at a time until fully incorporated. Pour this filling over the cooled crust.
  3. Bake the cheesecake in a water bath for 50–60 minutes, or until just set. Turn off the oven and leave the cheesecake inside for 1 hour to cool. Then, chill in the refrigerator for at least 4 hours or overnight.
  4. For the topping, warm the honey with lemon juice. Pour this mixture over the chilled cheesecake and then top with toasted pecans.
