Crispy, sticky, garlicky honey garlic chicken thighs roast that is unbelievably satisfying!

Ingredients

  • 6 chicken thighs
  • 500g baby potatoes
  • 2 cups broccoli
  • 3 tbsp olive oil
  • Salt & pepper
  • ½ tsp paprika
  • ½ tsp thyme
  • Fresh parsley
  • ¼ cup honey
  • 4 garlic cloves
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Instructions

  1. Mix honey, garlic, soy, lemon, and Dijon. Reserve half.
  2. Arrange chicken, potatoes, and broccoli on a tray. Season and oil. Brush with sauce.
  3. Bake for 35–40 minutes at 400°F (200°C). Baste during the final 10 minutes.
  4. Garnish with parsley and serve.

Notes

  • Broil for the last 2 minutes for extra crisp.
  • Swap broccoli for carrots if desired.
  • Use boneless thighs for a faster cook time.
