A simple, elegant, and irresistibly good dish featuring scallops coated in a honey garlic butter sauce.

Ingredients

  • 1 lb (450g) large sea scallops, patted dry
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp unsalted butter (for the sauce)
  • 3 cloves garlic, minced
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar (optional, for balance)
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Pat the scallops completely dry with paper towels — this helps achieve a perfect golden sear. Season both sides with salt and pepper.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Once hot, add scallops in a single layer (don’t overcrowd the pan). Sear for 2–3 minutes per side, until golden brown and opaque in the center. Remove scallops from the pan and set aside.
  3. In the same skillet, melt the remaining 2 tbsp butter. Add minced garlic and sauté for 30 seconds until fragrant. Whisk in honey, soy sauce, lemon juice, and vinegar. Let it simmer for 1–2 minutes until slightly thickened.
  4. Return the scallops to the pan, spooning the sauce over them to glaze evenly. Cook for another 30 seconds, just to heat through.
  5. Sprinkle with chopped parsley and serve immediately. Perfect with rice, mashed potatoes, or a crisp salad.

Notes

  • Use high heat for the perfect caramelized crust — avoid moving scallops too early.
  • For a spicy twist, add a pinch of chili flakes to the sauce.
  • Replace soy sauce with tamari for a gluten-free version.
