1¼ cups all-purpose flour
¼ cup sugar
½ cup unsalted butter, cold and cubed
1 egg yolk
1–2 tbsp cold water
4 apples, peeled and chopped
⅓ cup honey
¼ cup brown sugar
1 tbsp lemon juice
1 tsp cinnamon
1 tbsp cornstarch
2 tbsp butter
Vanilla ice cream, for serving
Extra honey for drizzle
Instructions
Make the crust: Blend flour, sugar, and cold butter until crumbly. Add egg yolk and cold water until dough forms. Chill 30 minutes, then roll into a tart pan.
Blind bake: Preheat oven to 375°F (190°C). Bake crust for 15 minutes with pie weights, then remove weights and bake 5 minutes more. Cool.
Cook the filling: In a pan, sauté apples with honey, brown sugar, lemon juice, and cinnamon until tender. Add cornstarch and cook 2 minutes until thickened.
Assemble: Spoon warm apple mixture into the crust. Bake 15 minutes more until golden and bubbling.
Serve: Cool slightly, top with vanilla ice cream, and finish with a drizzle of honey.
Notes
Use tart apples like Granny Smith for best balance.
Chill the crust well to keep it flaky.
Let the tart rest 10 minutes so the filling sets beautifully.
