A delicious and elegant dish featuring large chicken breasts stuffed with sautéed mushrooms, cheese, and herbs, served with a rich garlic cream sauce.

Ingredients

  • 2 large chicken breasts
  • 1/2 cup sautéed mushrooms (chopped)
  • 1/4 cup mozzarella or cream cheese
  • 1/4 cup fresh parsley (chopped)
  • 1 tsp Italian seasoning
  • Salt & pepper
  • Olive oil
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan
  • Chopped herbs (parsley or chives)
  • Toasted pine nuts for garnish

Instructions

  1. Slice a pocket into each chicken breast and stuff with mushroom, cheese, and herbs. Season well.
  2. Sear in a hot pan with olive oil until golden, then transfer to oven at 375°F (190°C) for 15–20 minutes.
  3. In the same pan, melt butter, sauté garlic, add broth, then stir in cream and Parmesan. Simmer until thick.
  4. Serve chicken sliced over sauce, topped with pine nuts and parsley.

  • Pair with roasted veggies, mashed potatoes, or a crisp white wine.
