Golden, buttery, tender and soul-satisfyingly comforting Herb Roasted Chicken served with mashed potatoes and glazed carrots.

Ingredients

  • 6 chicken drumsticks or thighs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk (warm)
  • 3 tbsp unsalted butter
  • Salt to taste
  • Extra parsley or chives, for garnish
  • 1 lb baby carrots
  • 2 tbsp honey
  • 1 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with olive oil, garlic powder, paprika, thyme, salt, and pepper. Roast on a baking tray for 35–40 minutes or until golden and fully cooked.
  3. Meanwhile, boil potatoes until fork-tender. Drain and mash with warm milk, butter, and salt until smooth and fluffy.
  4. In a skillet, cook baby carrots in a splash of water until just tender. Drain, then add butter and honey. Sauté for 5–7 minutes, seasoning with salt and pepper.
  5. Serve chicken with a scoop of mashed potatoes and glazed carrots. Sprinkle with fresh parsley.

Notes

  • For extra crispy skin, broil chicken for last 3 minutes.
  • You can swap carrots with green beans or roasted squash.
  • Use garlic-infused butter in mashed potatoes for a deeper flavor.
