6 chicken drumsticks or thighs
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried thyme
Salt and black pepper to taste
2 tbsp fresh parsley, chopped
2 lbs potatoes, peeled and cubed
1/2 cup milk (warm)
3 tbsp unsalted butter
Salt to taste
Extra parsley or chives, for garnish
1 lb baby carrots
2 tbsp honey
1 tbsp unsalted butter
Salt and pepper to taste
Fresh parsley, chopped
Instructions
Preheat oven to 400°F (200°C).
Season chicken with olive oil, garlic powder, paprika, thyme, salt, and pepper. Roast on a baking tray for 35–40 minutes or until golden and fully cooked.
Meanwhile, boil potatoes until fork-tender. Drain and mash with warm milk, butter, and salt until smooth and fluffy.
In a skillet, cook baby carrots in a splash of water until just tender. Drain, then add butter and honey. Sauté for 5–7 minutes, seasoning with salt and pepper.
Serve chicken with a scoop of mashed potatoes and glazed carrots. Sprinkle with fresh parsley.
Notes
For extra crispy skin, broil chicken for last 3 minutes.
You can swap carrots with green beans or roasted squash.
Use garlic-infused butter in mashed potatoes for a deeper flavor.
