A delicious and easy recipe for Herb Crusted Salmon served with a creamy Garlic Dill Sauce, perfect for a healthy dinner.

Ingredients

  • 4 salmon fillets (skin on or off, as preferred)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Lemon wedges, to serve
  • 1/2 cup plain Greek yogurt (for garlic dill sauce)
  • 2 tbsp mayonnaise (for garlic dill sauce)
  • 1 garlic clove, minced (for garlic dill sauce)
  • 1 tbsp fresh dill, chopped (or 1 tsp dried, for garlic dill sauce)
  • 1 tsp lemon juice (for garlic dill sauce)
  • Salt and pepper to taste (for garlic dill sauce)
  • Roasted baby potatoes (optional side)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix thyme, dill, garlic powder, salt, and pepper. Rub olive oil over the salmon fillets, then coat them with the herb mixture.
  3. Place salmon on a parchment-lined baking sheet and bake for 12–15 minutes or until flaky and opaque.
  4. In the meantime, mix all garlic dill sauce ingredients in a bowl. Chill until ready to serve.
  5. Plate salmon with sauce on the side, roasted potatoes, and fresh lemon wedges.

  • Pat salmon dry before seasoning for a crispy top.
  • Use a mix of fresh and dried herbs for deeper flavor.
  • Sauce can be made ahead and stored for 2–3 days in fridge.
