- 4 salmon fillets (skin on or off, as preferred)
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried dill
- 1 tsp garlic powder
- Salt and pepper to taste
- Lemon wedges, to serve
- 1/2 cup plain Greek yogurt (for garlic dill sauce)
- 2 tbsp mayonnaise (for garlic dill sauce)
- 1 garlic clove, minced (for garlic dill sauce)
- 1 tbsp fresh dill, chopped (or 1 tsp dried, for garlic dill sauce)
- 1 tsp lemon juice (for garlic dill sauce)
- Salt and pepper to taste (for garlic dill sauce)
- Roasted baby potatoes (optional side)
- Preheat oven to 400°F (200°C).
- In a small bowl, mix thyme, dill, garlic powder, salt, and pepper. Rub olive oil over the salmon fillets, then coat them with the herb mixture.
- Place salmon on a parchment-lined baking sheet and bake for 12–15 minutes or until flaky and opaque.
- In the meantime, mix all garlic dill sauce ingredients in a bowl. Chill until ready to serve.
- Plate salmon with sauce on the side, roasted potatoes, and fresh lemon wedges.
