  • Salmon:
    • 4 fillets
    • 2 tbsp olive oil
    • 2 garlic cloves, minced
    • 1 tbsp lemon juice
    • 1 tsp paprika
    • Salt & pepper
    • Chopped parsley
  • Potatoes:
    • 500 g baby potatoes, halved
    • 2 tbsp olive oil
    • 1 tsp oregano
    • Salt & pepper
  • Asparagus:
    • 1 bunch asparagus
    • 1 tbsp olive oil
    • Salt & pepper
    • ½ cup mozzarella
    • 1 tbsp herbs

Instructions

  1. Roast the Potatoes: Bake at 400°F (200°C) for 25–30 minutes until crisp and golden.
  2. Cook the Salmon: Mix oil, garlic, lemon, paprika, salt, and pepper. Coat salmon and sear 4–5 minutes per side. Sprinkle parsley.
  3. Make the Asparagus: Roast asparagus 10 minutes, top with cheese, and bake 3–5 minutes more.
  4. Serve & Enjoy: Plate salmon with potatoes and asparagus. Garnish with lemon wedges.

Notes

  • For extra flavor, consider adding lemon zest to the salmon mixture.
  • Make sure to check the salmon for doneness; it should flake easily with a fork.
