  • 2 tbsp olive oil
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Fresh herbs
  • 2 tbsp olive oil or butter (for sauce)
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp pepper (for sauce)
  • Salt (to taste)
  • 1 tbsp fresh parsley (for sauce)
  • Grilled lemon halves (to serve)

Instructions

  1. Season & Sear: Coat tenderloin in oil and seasonings. Sear all sides for 2–3 minutes.
  2. Roast: Roast at 400°F (200°C) for 20–25 minutes (135°F for medium-rare). Rest for 10 minutes.
  3. Make Cream Sauce: Sauté garlic. Add cream, mustard, pepper, and salt. Simmer for 5–7 minutes until thick. Stir in herbs.
  4. Serve: Slice tenderloin. Spoon sauce beneath or on top. Add grilled lemon.
