- 1 lb ground beef
- ½ head of green cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
- Optional: fresh parsley for garnish
- In a large soup pot, cook ground beef until browned. Drain excess fat.
- Add onions, garlic, carrots, and celery to the pot. Sauté for 5 minutes until softened.
- Stir in cabbage, diced tomatoes, broth, paprika, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, until cabbage is tender.
- Ladle into bowls, garnish with parsley, and serve with toasted bread.
