Hearty Beef Bean Stew is a comforting one-pot meal that combines ground beef, beans, and vegetables for a delicious and filling dinner.

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 3 medium potatoes, peeled and cubed
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional for heat)
  • Salt & black pepper to taste
  • 1 cup beef broth
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil and cook the ground beef until fully browned.
  2. Add onion, garlic, and bell peppers. Cook for 5–7 minutes until soft and fragrant.
  3. Stir in potatoes, kidney beans, diced tomatoes, and tomato paste.
  4. Season with paprika, chili powder, salt, and pepper. Pour in the beef broth, then simmer for 25–30 minutes until potatoes are fork-tender.
  5. Taste and adjust seasoning. Serve hot, garnished with parsley if desired.

  • This stew is perfect for cold weather and can be made ahead of time.
