A fresh and crunchy mixed salad with cabbage, carrots, and a creamy Greek yogurt dressing. Perfect for meal prep or as a healthy side dish.

Ingredients

  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/2 cup plain Greek yogurt (or light mayo for creamier version)
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, mix Greek yogurt, apple cider vinegar, Dijon, and honey until smooth.
  2. In a large bowl, combine both cabbages, carrots, and green onions.
  3. Pour the dressing over the veggies and toss until evenly coated.
  4. Refrigerate for at least 30 minutes to let the flavors blend.
  5. Serve solo, in wraps, or next to grilled protein.
