1 lb lean ground beef (90% or higher)
1 small onion, finely chopped
2 cloves garlic, minced
2 cups low-sodium beef broth
1 ½ cups unsweetened almond milk (or low-fat milk)
2 cups elbow or cavatappi pasta (whole wheat if desired)
1 cup shredded sharp cheddar cheese
1/4 cup grated Parmesan
1 tbsp tomato paste
1 tsp paprika
1/2 tsp mustard powder
Salt and black pepper, to taste
1 tbsp olive oil
Fresh parsley, chopped (for garnish)
Instructions
Sauté the Beef & Onions: In a large skillet or pot, heat olive oil and cook ground beef and onion until browned. Add garlic and cook 1 minute more.
Add Seasonings & Tomato Paste: Stir in tomato paste, paprika, mustard powder, salt, and pepper. Let everything cook together.
Pour in Broth, Milk & Pasta: Add the beef broth, almond milk, and pasta directly into the pot. Bring to a boil, then reduce to a simmer.
Simmer Until Pasta’s Perfect: Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is al dente and the sauce thickens.
Cheesy Finish & Garnish: Stir in cheddar and Parmesan until melted and creamy. Serve hot, topped with fresh parsley.
Notes
This recipe can be made with whole wheat pasta for added fiber.
Feel free to add vegetables like spinach or bell peppers for extra nutrition.
