A flavorful dish featuring thick, caramelized sweet potato rounds topped with creamy labneh, vibrant herb sauce, and fresh pomegranate seeds.

Ingredients

  • 2 large sweet potatoes, peeled and sliced into 1-inch thick rounds
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup labneh (or thick strained yogurt)
  • 1/2 cup pomegranate seeds
  • Fresh herbs (parsley, mint or cilantro), chopped (for garnish)
  • For the herb sauce:
  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro or mint
  • 1 clove garlic
  • 1 green chili (optional)
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt to taste

Instructions

  1. Preheat grill or grill pan over medium heat.
  2. Brush sweet potato rounds with olive oil, season with salt and pepper.
  3. Grill sweet potato slices for about 5 minutes per side, until charred and tender. Set aside.
  4. Blend all herb sauce ingredients in a food processor until smooth.
  5. Spread labneh on a serving plate, arrange grilled sweet potatoes on top.
  6. Drizzle generously with herb sauce, sprinkle with pomegranate seeds and chopped herbs.
  7. Serve warm or at room temperature.

Notes

  • Serve as a stunning side to grilled chicken or lamb.
  • Add chickpeas for a protein-packed vegan main.
  • Perfect with flatbread on the side.
  • Don’t skip the pomegranate! It adds bright sweetness that balances the dish.
  • Can be made ahead – assemble just before serving.
