Ingredients

For the Steak:

  • 1 lb ribeye steak (or your preferred cut)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For the Caramelized Onions:

  • 2 large onions (thinly sliced)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • ½ tsp salt
  • 1 tbsp balsamic vinegar (optional)

For the Sandwich:

  • 4 slices of thick-cut bread (or brioche buns)
  • 4 slices provolone or Swiss cheese
  • 2 tbsp butter (for toasting the bread)

Instructions

1️⃣ Prepare the Caramelized Onions:

  1. Heat butter and olive oil in a pan over medium heat.
  2. Add sliced onions, salt, and brown sugar. Stir occasionally.
  3. Cook for 15-20 minutes until soft and golden brown.
  4. Add balsamic vinegar in the last 5 minutes for extra depth of flavor.

2️⃣ Grill the Steak:

  1. Preheat a grill or pan to high heat.
  2. Rub the steak with olive oil, salt, black pepper, and garlic powder.
  3. Cook for 3-4 minutes per side for medium-rare (or adjust to your preferred doneness).
  4. Let it rest for 5 minutes before slicing thinly.

3️⃣ Assemble the Sandwich:

  1. Butter one side of each slice of bread.
  2. Place cheese on the unbuttered side, then add the sliced steak and caramelized onions.
  3. Top with another cheese slice and close the sandwich.

4️⃣ Toast the Sandwich:

  1. Heat a pan over medium heat and grill the sandwich for 2-3 minutes per side, until golden brown and cheese is melted.

5️⃣ Serve & Enjoy!

  1. Slice in half and dig in while it’s hot and melty!
