4 lobster tails, split lengthwise
2 tbsp olive oil
3 tbsp unsalted butter
3 cloves garlic, finely minced
1 tsp lemon juice
1 tsp Dijon mustard
1 tbsp fresh parsley, chopped
Salt & freshly cracked black pepper to taste
Optional: pinch of paprika for a smoky kick
Instructions
Prep the Lobster Tails: Using sharp kitchen scissors, cut through the top of the shell and gently lift the meat. Brush tails with olive oil, salt, and pepper.
Grill or Broil the Lobster: Place lobster tails meat-side down on a hot grill or broil in oven for 5–7 minutes, flipping halfway.
Make the Herb Butter Sauce: In a small saucepan, melt butter and stir in garlic, lemon juice, Dijon, parsley, and optional paprika. Simmer gently for 1–2 minutes.
Glaze & Finish: Spoon the warm herb butter over the grilled lobster tails and garnish with more parsley and cracked pepper.
