Ingredients

  • 2 boneless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon dried oregano
  • 200g penne or linguine pasta
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 1/2 cups cherry tomatoes, halved
  • 2 cups fresh spinach leaves
  • 1/2 cup cooking cream or thickened cream
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken strips with salt, pepper, garlic powder, chili flakes, and oregano.
  3. In a large skillet, heat olive oil over medium-high heat. Grill chicken pieces 4–5 minutes per side until golden and cooked through. Set aside.
  4. In the same skillet, melt butter. Add garlic and sauté for 1 minute. Add cherry tomatoes and cook until blistered, about 4–5 minutes.
  5. Stir in spinach and cook until wilted. Pour in cream and Parmesan, simmer 2–3 minutes until slightly thickened.
  6. Add cooked pasta and grilled chicken back to the skillet. Toss everything together until well coated.
  7. Serve warm, garnished with fresh basil.
