  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried parsley (or fresh parsley for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Season chicken thighs with salt, pepper, garlic powder, paprika, and thyme. Drizzle with olive oil and lemon juice.
  3. Grill chicken thighs for 7–8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden.
  4. While chicken cooks, prepare the sauce: Melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  5. Pour in heavy cream and Dijon mustard, stirring to combine. Simmer for 3-4 minutes, allowing the sauce to thicken.
  6. Stir in Parmesan cheese and season with salt and pepper to taste.
  7. Once the chicken is cooked, pour the creamy sauce over the chicken thighs.
  8. Garnish with fresh parsley and serve with your favorite sides.
