Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of fresh ginger, peeled and grated
  • 4 cups broccoli florets
  • 1 zucchini, chopped
  • 1 cup green peas (fresh or frozen)
  • 2 cups spinach
  • 4 cups vegetable broth
  • Juice of 1 lemon
  • Salt & pepper to taste
  • Red chili flakes (optional, for topping)
  • Extra virgin olive oil (for drizzling)

Instructions

  1. In a large pot, heat olive oil over medium. Add onion, garlic, and ginger. Cook until softened and fragrant.
  2. Stir in broccoli, zucchini, and peas. Cook for 3–4 minutes.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10–12 minutes until veggies are fork-tender.
  4. Add spinach and let wilt for 1–2 minutes. Blend the soup until smooth or your preferred consistency.
  5. Stir in lemon juice, season with salt and pepper. Serve hot, topped with olive oil and chili flakes.

Notes

  • This soup is vegan and low-calorie.
  • Feel free to add other greens or vegetables as desired.
  • Store leftovers in the refrigerator for up to 3 days.
