- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of fresh ginger, peeled and grated
- 4 cups broccoli florets
- 1 zucchini, chopped
- 1 cup green peas (fresh or frozen)
- 2 cups spinach
- 4 cups vegetable broth
- Juice of 1 lemon
- Salt & pepper to taste
- Red chili flakes (optional, for topping)
- Extra virgin olive oil (for drizzling)
- In a large pot, heat olive oil over medium. Add onion, garlic, and ginger. Cook until softened and fragrant.
- Stir in broccoli, zucchini, and peas. Cook for 3–4 minutes.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10–12 minutes until veggies are fork-tender.
- Add spinach and let wilt for 1–2 minutes. Blend the soup until smooth or your preferred consistency.
- Stir in lemon juice, season with salt and pepper. Serve hot, topped with olive oil and chili flakes.
Notes
- This soup is vegan and low-calorie.
- Feel free to add other greens or vegetables as desired.
