A delicious and flavorful Green Chile Cheese Sourdough bread recipe that combines the tanginess of sourdough with the spice of green chiles and the richness of cheese.

  • 500g bread flour
  • 100g active sourdough starter
  • 350g warm water
  • 10g salt
  • 1 cup roasted green chiles, chopped
  • 1 cup shredded cheddar cheese (or Monterey Jack for milder flavor)
  • Olive oil for greasing

Instructions

  1. Mix flour, sourdough starter, and warm water in a large bowl until shaggy. Let it rest for 30 minutes.
  2. Add salt, then perform a series of stretch-and-folds every 30 minutes for 2 hours.
  3. After the final stretch, gently fold in chopped green chiles and shredded cheese.
  4. Transfer to a floured banneton or bowl, cover, and refrigerate overnight.
  5. Preheat oven to 475°F with Dutch oven inside. Place dough on parchment, score the top, and bake covered for 20 min, then uncovered for 20-25 min until golden and bubbly.

Notes

  • For a milder flavor, use Monterey Jack cheese instead of cheddar.
