1 lb ground turkey (preferably 93% lean)
2 garlic cloves, minced
1/4 cup red onion, finely diced
1/4 cup fresh parsley, chopped
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (for cooking)
4 burger buns
1 cup arugula or baby spinach
4 slices of tomato
4 slices of red onion
Optional: fresh dill sprigs for garnish
For the Tzatziki Sauce:
1/2 cup plain Greek yogurt
1/4 cup cucumber, grated and squeezed dry
1 tbsp olive oil
1 tsp lemon juice
1 garlic clove, minced
1 tbsp chopped fresh dill
Salt and pepper to taste
Instructions
Make the Tzatziki Sauce: In a bowl, mix Greek yogurt, grated cucumber, lemon juice, garlic, olive oil, and dill. Add salt and pepper to taste. Chill in the fridge for 10 minutes.
Mix the Turkey Patty Blend: Combine ground turkey, minced garlic, diced onion, parsley, oregano, salt, and pepper in a large bowl.
Shape & Cook the Patties: Form into 4 equal patties. Heat olive oil in a skillet or grill pan and cook patties over medium heat for 5–6 minutes per side until golden and fully cooked.
Build the Burger Stack: Toast the buns lightly, spread a thick layer of chilled tzatziki on the bottom, add fresh arugula, the turkey patty, sliced tomato, red onion, and top bun.
Serve & Garnish: Garnish with a bit of extra tzatziki or fresh dill. Serve with sweet potato fries or a crisp side salad.
Notes
For extra flavor, let the turkey mixture sit for a few minutes before cooking.
