- 1.5 lbs baby potatoes, halved
- 1/2 cup kalamata olives, pitted
- 1/4 cup green olives
- 1/2 cup feta cheese, crumbled
- 1/3 cup red onion, sliced
- 2 tbsp fresh parsley, chopped
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt & pepper to taste
- Boil potatoes until fork-tender, then drain and cool slightly.
- Slice olives, onions, and chop parsley.
- Whisk olive oil, lemon juice, oregano, salt, and pepper.
- Combine potatoes, olives, onion, parsley, and dressing.
- Sprinkle crumbled feta on top before serving.

- Best served chilled.
