  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Metal or wooden skewers
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/4 red onion, sliced thin
  • 1/2 cup feta cheese, cubed
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • 1/2 tbsp red wine vinegar
  • Salt, pepper, dried oregano to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • Salt & dried oregano to taste
  • Warm pita or flatbread
  • Lemon wedges for serving

Instructions

  1. Marinate the Chicken: Combine olive oil, lemon juice, garlic, oregano, smoked paprika, and salt in a bowl. Toss in the chicken cubes and let them soak up those bold Greek flavors.
  2. Skewer & Grill: Thread the marinated chicken onto skewers. Grill on medium-high heat for 10–12 minutes, turning occasionally until golden and juicy.
  3. Mix the Greek Salad: In a bowl, combine cucumbers, cherry tomatoes, red onion, and feta. Drizzle with olive oil and red wine vinegar, season with oregano.
  4. Whip Up the Tzatziki: Mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and seasoning.
  5. Assemble the Platter: Warm your pita, then plate it with the grilled chicken skewers, salad, a dollop of tzatziki, and a lemon wedge.
