Golden Turmeric Soup is a cozy, immune-boosting delight that combines the flavors of turmeric, cauliflower, and butternut squash for a creamy, comforting dish.

Ingredients

  • 1 tablespoon coconut oil (or olive oil)
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 3 cups cauliflower florets
  • 1 1/2 cups peeled and cubed butternut squash (or sweet potato)
  • 3 cups vegetable broth
  • 1/2 cup full-fat coconut milk (plus extra for garnish)
  • Salt & black pepper to taste
  • Fresh parsley or cilantro, for garnish
  • Optional: a pinch of chili flakes for heat

Instructions

  1. Sauté the Aromatics: In a large pot, heat coconut oil over medium. Add onion, garlic, and ginger, cooking until soft and fragrant.
  2. Spice It Up: Stir in turmeric, cumin, and cinnamon. Toast the spices for 1–2 minutes.
  3. Add Veggies & Simmer: Toss in the cauliflower and squash. Pour in the broth, bring to a boil, then simmer for 20–25 minutes.
  4. Blend It Creamy: Remove from heat and blend the soup until velvety smooth. Stir in coconut milk.
  5. Garnish & Serve: Taste and adjust salt and pepper. Swirl with extra coconut milk and sprinkle with parsley or chili flakes.
