Ingredients

  • 2 tbsp olive oil
  • 2 lbs beef chunks
  • Salt & black pepper
  • 2 tbsp butter
  • 3 onions, thinly sliced
  • 1 tbsp honey
  • 1 tbsp flour
  • 4 cups beef broth
  • 1 tbsp soy sauce
  • 1 tsp thyme
  • 1 bay leaf
  • 1½ cups shredded mozzarella + provolone blend
  • Toasted bread slices
  • Fresh thyme for garnish

Instructions

  1. Sear seasoned beef until browned; set aside.
  2. Caramelize onions in butter for 25–30 min; stir in honey.
  3. Add flour, broth, soy sauce, thyme, and bay leaf.
  4. Simmer with beef for 90–120 min until tender.
  5. Ladle into bowls, top with toast and cheese, broil until melted.
