- 4 oz goat cheese (softened)
- 2 tbsp cream cheese (room temp)
- 1/4 cup chopped roasted pistachios
- 1 tsp honey or maple syrup (optional)
- 1 tbsp olive oil
- 1 tsp fresh thyme or oregano leaves
- Salt & freshly cracked black pepper to taste
- Preheat oven to 375°F (190°C). Brush mushroom caps with olive oil, season lightly, and roast on a baking sheet for 15 minutes.
- In a bowl, combine goat cheese, cream cheese, and honey (if using). Mix until smooth and fluffy.
- Spoon or pipe the cheese mixture into each roasted mushroom.
- Sprinkle chopped pistachios over the cheese filling.
- Garnish with fresh thyme or oregano and a twist of black pepper. Serve warm or at room temp.
