- 6 lobster tails, split in half
- 1 lb lobster meat, chopped
- 4 tbsp unsalted butter, melted
- 3 garlic cloves, minced
- ¾ cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- ¼ cup grated Romano cheese
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp Old Bay seasoning
- ½ tsp paprika
- ½ tsp Italian seasoning
- 1 tbsp fresh lemon juice
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
- Preheat oven to 400°F (200°C). Split lobster tails and loosen meat while keeping attached to shell. Season with salt, pepper, paprika, and Old Bay.
- Combine chopped lobster meat, melted butter, garlic, mayonnaise, Dijon, cheeses, panko, Italian seasoning, lemon juice, and parsley in a bowl.
- Spoon stuffing into each lobster shell, mounding slightly. Sprinkle with extra Parmesan and drizzle with butter.
- Bake 18-22 minutes until lobster is opaque and topping is golden. Broil 1-2 minutes for crispiness.
- Garnish with parsley and serve with lemon wedges.
