2 large eggplants, sliced into thick rounds
1 lb ground beef
2 tbsp olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 cup marinara sauce
½ cup diced cherry tomatoes
1½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Italian seasoning
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
Salt and black pepper, to taste
2 tbsp chopped fresh basil
2 tbsp chopped fresh parsley
Instructions
Preheat the oven to 400°F (200°C). Brush the eggplant slices with olive oil, season with salt and pepper, and roast for 20 minutes until tender.
Heat the remaining olive oil in a skillet over medium-high heat. Sauté the onion until softened, then add the garlic.
Add the ground beef and cook until browned, breaking it into small crumbles.
Stir in the marinara sauce, cherry tomatoes, Italian seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Simmer for 5 minutes.
Arrange the roasted eggplant slices in a baking dish and spoon the beef mixture over each slice.
Top generously with mozzarella and Parmesan cheese.
Bake for 15–18 minutes, until the cheese is melted, bubbly, and lightly golden.
Garnish with fresh basil and parsley before serving.
Serve hot with garlic bread, pasta, or a crisp Caesar salad.
Notes
For a vegetarian version, omit the ground beef and add more vegetables.
Make sure to salt the eggplant before roasting to reduce bitterness.
This dish can be prepared ahead of time and baked just before serving.
