  • 4 medium Yukon Gold or Russet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly cracked black pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the potato cubes, olive oil, garlic, oregano, thyme, rosemary, paprika, salt, and pepper. Toss well to coat evenly.
  3. Spread potatoes on the baking sheet in a single layer, making sure they aren’t overcrowded.
  4. Roast for 35–40 minutes, flipping once halfway through, until golden, crispy, and tender inside.
  5. Garnish with chopped fresh parsley and serve hot.

Notes

  • Parboil potatoes for 5 minutes before roasting for ultra-crispy edges.
  • Add a dash of lemon zest after baking for a zippy finish.
