  • 4 lamb chops
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon parsley, chopped
  • Salt and black pepper, to taste
  • Juice of half a lemon

Instructions

  1. Pat lamb chops dry with paper towels. Season both sides with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add lamb chops and sear 3–4 minutes on each side until golden brown and internal temperature reaches desired doneness.
  3. Reduce heat to medium. Add butter, garlic, rosemary, thyme, and parsley to the skillet. Spoon the melted butter and herbs over the chops as they finish cooking, about 1–2 minutes.
  4. Squeeze lemon juice over the top before removing from heat. Let rest for 5 minutes before serving.
