4 salmon fillets, skin-on or skinless
2 tbsp olive oil
3 garlic cloves, minced
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp black pepper
Salt to taste
1/2 cup shredded mozzarella or provolone
1/4 cup grated Parmesan cheese
2 tbsp fresh parsley or thyme, chopped
Lemon wedges, for serving
Instructions
Preheat oven to 400°F (200°C). Line a baking tray with parchment or lightly grease it.
Pat salmon fillets dry and place them on the tray.
In a small bowl, mix olive oil, garlic, oregano, paprika, black pepper, and a pinch of salt.
Brush the mixture generously over each salmon fillet.
Combine mozzarella and Parmesan in another bowl, then sprinkle evenly over the tops of the fillets.
Bake for 12–15 minutes, or until salmon is flaky and the cheese is bubbling and golden.
Garnish with fresh herbs and serve with lemon wedges.
Notes
Use freshly grated cheese for better melt and flavor.
Avoid overbaking to keep the salmon juicy.
Try adding a touch of chili flakes for a spicy kick.
