Ingredients

  • 34 lb beef roast
  • 4 garlic cloves, minced
  • 2 tbsp parsley
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • 1 1/2 tsp sea salt
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 1 tbsp Dijon (optional)
  • 1 tbsp lemon juice (optional)

Instructions

  1. Make Herb Paste: Mix garlic, parsley, thyme, rosemary, salt, pepper, oil, Dijon, and lemon juice.
  2. Season & Sear: Rub paste over beef. Sear 2–3 minutes per side.
  3. Roast: Bake at 375°F (190°C) for 45–60 minutes. Rest 10–15 minutes.
  4. Slice & Serve: Slice against the grain. Pour pan juices on top.
