Delicious garlic herb chicken thighs served with creamy mashed potatoes and rich pan gravy.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and freshly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream (optional for richer sauce)
  • 1 tablespoon chopped fresh parsley
  • 4 large potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup warm milk
  • Salt to taste

Instructions

  1. Preheat oven to 200°C / 400°F. Pat chicken thighs dry and season generously with salt, pepper, paprika, and thyme.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Place chicken skin-side down and sear 5–7 minutes until deeply golden and crispy.
  3. Flip chicken and transfer skillet to oven. Roast 20–25 minutes until cooked through (internal temp 75°C / 165°F). Remove and set aside.
  4. In the same skillet, reduce heat to medium. Add butter and garlic, sauté 30 seconds until fragrant.
  5. Pour in chicken broth (and cream if using). Simmer 3–5 minutes until slightly thickened. Stir in parsley.
  6. For mash: Boil potatoes in salted water 15–18 minutes until fork tender. Drain and mash with butter and warm milk. Season to taste.
  7. Serve chicken over creamy mashed potatoes and spoon generous pan gravy over the top.

  • Add roasted carrots or green beans on the side.
  • Finish with a squeeze of lemon for brightness.
  • Sprinkle extra fresh herbs before serving.
  • Pat chicken dry for extra crispy skin.
