  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • 1 tbsp lemon juice
  • 4 large russet potatoes, peeled and cubed
  • ½ cup whole milk
  • 2 tbsp butter
  • Salt to taste
  • 2 cups baby carrots
  • 1 tbsp honey
  • 1 tbsp butter
  • ½ tsp dried thyme
  • Pinch of salt

Instructions

  1. Marinate and bake the chicken: Toss drumsticks with olive oil, garlic, parsley, lemon juice, paprika, and seasoning. Let it sit for flavor-packed results. Roast at 400°F for 35-40 mins.
  2. Whip up creamy mash: Boil potatoes until fork-tender (about 15 mins). Mash with butter and warm milk until creamy and smooth.
  3. Glaze those carrots: In a pan, melt butter and honey, add carrots, and sauté until tender and glossy (about 8-10 mins).
  4. Plate it up: Load your plate with mashed potatoes, a couple juicy drumsticks, and glossy carrots. Drizzle leftover pan juices for that next-level bite.
  5. Garnish & serve hot: Sprinkle extra parsley over everything and serve hot.
