2 tbsp olive oil
1 tbsp garlic (minced)
1 tbsp fresh parsley (or 1 tsp dried)
1 tsp Italian seasoning
½ tsp smoked paprika
Salt & black pepper to taste
1 tbsp lemon juice
4 large russet potatoes, peeled and cubed
½ cup whole milk
2 tbsp butter
Salt to taste
2 cups baby carrots
1 tbsp honey
1 tbsp butter
½ tsp dried thyme
Pinch of salt
Instructions
Marinate and bake the chicken: Toss drumsticks with olive oil, garlic, parsley, lemon juice, paprika, and seasoning. Let it sit for flavor-packed results. Roast at 400°F for 35-40 mins.
Whip up creamy mash: Boil potatoes until fork-tender (about 15 mins). Mash with butter and warm milk until creamy and smooth.
Glaze those carrots: In a pan, melt butter and honey, add carrots, and sauté until tender and glossy (about 8-10 mins).
Plate it up: Load your plate with mashed potatoes, a couple juicy drumsticks, and glossy carrots. Drizzle leftover pan juices for that next-level bite.
Garnish & serve hot: Sprinkle extra parsley over everything and serve hot.
