Ingredients

  • 34 lb beef roast
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary
  • 1 tbsp fresh thyme
  • 1 tsp black pepper
  • 1 1/2 tsp sea salt
  • 3 tbsp olive oil
  • 1 tbsp Dijon mustard (optional)
  • 1 pint cherry tomatoes
  • Fresh herbs for garnish

Instructions

  1. Prepare the Roast: Mix garlic, rosemary, thyme, pepper, salt, olive oil, and Dijon. Rub all over beef.
  2. Sear: Sear roast 2–3 minutes per side until browned. Transfer to a baking dish.
  3. Add Tomatoes & Roast: Scatter tomatoes around beef. Drizzle tomatoes with olive oil and seasoning. Roast at 375°F (190°C) for 45–60 minutes. Rest 10–15 minutes.
  4. Serve: Slice thick and spoon roasted tomato juices over top. Garnish with herbs.
