3–4 lb beef roast
4 garlic cloves, minced
2 tbsp fresh rosemary
1 tbsp fresh thyme
1 tsp black pepper
1 1/2 tsp sea salt
3 tbsp olive oil
1 tbsp Dijon mustard (optional)
1 pint cherry tomatoes
Fresh herbs for garnish
Instructions
Prepare the Roast: Mix garlic, rosemary, thyme, pepper, salt, olive oil, and Dijon. Rub all over beef.
Sear: Sear roast 2–3 minutes per side until browned. Transfer to a baking dish.
Add Tomatoes & Roast: Scatter tomatoes around beef. Drizzle tomatoes with olive oil and seasoning. Roast at 375°F (190°C) for 45–60 minutes. Rest 10–15 minutes.
Serve: Slice thick and spoon roasted tomato juices over top. Garnish with herbs.
