2 cups extra virgin olive oil
3–4 fresh rosemary sprigs
2–3 sprigs of thyme (optional)
1 tsp crushed red pepper flakes (optional)
Pinch of sea salt
Instructions
Prep the garlic by using fresh, peeled cloves.
In a small saucepan, combine garlic, olive oil, herbs, and red pepper flakes. Simmer on low heat for 45–60 minutes.
Cook until garlic is tender and lightly golden, not browned.
Let the confit cool, then transfer to a clean, airtight jar.
Store in the fridge for up to 1 week and use in various dishes.
