A delicious and hearty garlic butter steak stuffed eggplant dish that combines tender roasted eggplant with a creamy steak mixture topped with melted cheese.

Ingredients

  • 2 large eggplants, halved lengthwise
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 lb (450 g) sirloin or ribeye steak, cut into bite-sized pieces
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp dried Italian seasoning
  • ½ cup heavy cream
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Score the eggplant flesh, brush with olive oil, season with salt and pepper, and roast for 25–30 minutes until tender.
  2. Scoop out some of the softened eggplant flesh, chop it, and set it aside.
  3. Season the steak bites with smoked paprika, onion powder, Italian seasoning, salt, and pepper.
  4. Heat the butter in a large skillet over medium-high heat. Sear the steak for 2–3 minutes until browned. Add the garlic and cook for 30 seconds.
  5. Stir in the chopped eggplant flesh, heavy cream, lemon juice, and half of the Parmesan cheese. Simmer for 2–3 minutes until creamy.
  6. Fill each roasted eggplant half with the creamy steak mixture and top with mozzarella and the remaining Parmesan cheese.
  7. Bake for 15–18 minutes until the cheese is melted and bubbling, then broil for 2–3 minutes until golden brown.
  8. Garnish with fresh parsley and dill, then serve immediately with extra garlic butter spooned over the top.

Notes

  • For a spicier kick, add red pepper flakes to the steak mixture.
  • This dish can be prepared in advance and baked just before serving.
  • Feel free to substitute the steak with ground beef or turkey for a different flavor.
