  • 1 lb baby potatoes (diced into small chunks)
  • 3 tbsp olive oil (divided)
  • 4 tbsp unsalted butter
  • 4 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt and black pepper (to taste)
  • 2 tbsp fresh parsley (chopped (for garnish))

Instructions

1️⃣ Cook the Potatoes:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the diced potatoes, season with salt, pepper, and paprika, and cook for 12-15 minutes, stirring occasionally, until golden and crispy. Remove and set aside.

2️⃣ Sear the Steak Bites:

  1. In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat.
  2. Season the steak bites with salt and black pepper.
  3. Sear the steak in a single layer for 2-3 minutes per side until browned. Remove and set aside with the potatoes.

3️⃣ Make the Garlic Butter Sauce:

  1. Lower the heat to medium and melt the butter in the skillet.
  2. Add the minced garlic, thyme, and rosemary. Sauté for about 1 minute until fragrant.

4️⃣ Combine and Garnish:

  1. Return the steak and potatoes to the skillet, tossing them in the garlic butter sauce until well coated.
  2. Sprinkle with fresh parsley and serve warm.
