Pat the steak bites dry with a paper towel to remove excess moisture. This ensures a nice sear.
Season the steak cubes with salt, black pepper, smoked paprika, onion powder, and red pepper flakes if using. Toss well to coat evenly.
2: Cooking the Steak Bites
Heat a large skillet over medium-high heat and add 1 tbsp olive oil.
Once hot, add the steak bites in a single layer and sear for about 2 minutes on each side until browned. Work in batches if necessary.
Reduce heat to low, add butter and minced garlic to the pan. Stir the steak bites to coat them in the melted garlic butter. Cook for another 1-2 minutes.
Remove from heat and sprinkle with fresh parsley. Set aside.
3: Preparing the Creamy Parmesan Shells
Cook pasta shells according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
In a separate pan, heat butter and olive oil over medium heat. Add minced garlic and sauté until fragrant.
Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, pepper, and nutmeg.
Add the cooked pasta shells and reserved pasta water, stirring to combine until creamy.
