Juicy, tender steak bites coated in garlic butter and served with a rich onion gravy.

Ingredients

  • 1 1/2 lbs sirloin steak, cut into bite-sized cubes
  • Salt and freshly cracked black pepper to taste
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 2 large onions, sliced into rings
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon cornstarch + 1 tablespoon water (slurry)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pat steak dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over high heat. Sear steak bites 1–2 minutes per side until browned but still juicy inside. Remove and set aside.
  3. Lower heat to medium. Add butter and sliced onions to the same pan. Cook 10–12 minutes until deeply golden and caramelized.
  4. Stir in garlic and cook 30 seconds until fragrant.
  5. Add brown sugar and balsamic vinegar. Let onions glaze slightly.
  6. Pour in beef broth and Worcestershire sauce. Simmer 3–4 minutes.
  7. Stir in cornstarch slurry and cook until gravy thickens.
  8. Return steak bites to the pan and spoon onion gravy over. Simmer 2 minutes just to heat through.
  9. Sprinkle with fresh parsley before serving.

Notes

  • Don’t overcrowd the pan when searing steak.
  • Let steak rest 5 minutes before adding back to gravy.
  • Cook onions slowly for the deepest flavor.
