- 1 1/2 lbs sirloin steak, cut into bite-sized cubes
- Salt and freshly cracked black pepper to taste
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves, minced
- 2 large onions, sliced into rings
- 1 tablespoon brown sugar
- 1 tablespoon balsamic vinegar
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon cornstarch + 1 tablespoon water (slurry)
- 1 tablespoon chopped fresh parsley
- Pat steak dry and season with salt, pepper, and paprika.
- Heat olive oil in a large skillet over high heat. Sear steak bites 1–2 minutes per side until browned but still juicy inside. Remove and set aside.
- Lower heat to medium. Add butter and sliced onions to the same pan. Cook 10–12 minutes until deeply golden and caramelized.
- Stir in garlic and cook 30 seconds until fragrant.
- Add brown sugar and balsamic vinegar. Let onions glaze slightly.
- Pour in beef broth and Worcestershire sauce. Simmer 3–4 minutes.
- Stir in cornstarch slurry and cook until gravy thickens.
- Return steak bites to the pan and spoon onion gravy over. Simmer 2 minutes just to heat through.
- Sprinkle with fresh parsley before serving.
Notes
- Don’t overcrowd the pan when searing steak.
- Let steak rest 5 minutes before adding back to gravy.
- Cook onions slowly for the deepest flavor.
