Ingredients

Scale
  • 250g spaghetti
  • 2 tablespoons olive oil
  • 500g large shrimp, peeled and deveined
  • 4 garlic cloves, finely minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 1 cup diced tomatoes (canned or fresh)
  • 1/4 cup water
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish)
  • Juice of half a lemon

Instructions

  1. Bring a large pot of salted water to boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  3. Add shrimp, paprika, salt, black pepper, and oregano. Cook for 2-3 minutes on each side, until pink and cooked through. Remove shrimp and set aside.
  4. In the same pan, add tomato paste and cook for 1 minute. Add diced tomatoes and water. Simmer for 5-6 minutes until sauce thickens slightly.
  5. Stir in the butter, lemon juice, and reserved pasta water. Return shrimp to the pan, then toss in the cooked spaghetti until everything is coated and heated through.
  6. Garnish with chopped parsley and serve hot.

Notes

  • Serve with crusty garlic bread or a side of roasted vegetables.
  • Add steamed spinach or sautéed zucchini for a veggie boost.
  • Top with a sprinkle of grated Parmesan or a drizzle of chili oil for extra flavor.
  • Use fresh shrimp for the best texture.
  • Don’t overcook the shrimp – they cook fast!
  • For a gluten-free version, use gluten-free spaghetti or rice noodles.
