Ingredients

  • lbs large shrimp, peeled and deveined
  • 4 ears sweet corn, cut into halves or thirds
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 garlic cloves, minced
  • 1 tbsp fresh lemon juice
  • 2 tsp Old Bay seasoning
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • Salt and freshly cracked black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Cook the Corn: Bring a large pot of salted water to a boil and cook the corn for 6–8 minutes until tender. Drain and set aside.
  2. Sear the Shrimp: Pat the shrimp dry and season with Old Bay, Cajun seasoning, paprika, salt, and pepper. Heat the olive oil in a large skillet and cook the shrimp for 1–2 minutes per side until pink and lightly golden.
  3. Make the Garlic Butter Sauce: Lower the heat and melt the butter in the same skillet. Add the garlic and sauté until fragrant, then stir in the lemon juice.
  4. Toss Everything Together: Return the shrimp to the skillet and add the cooked corn. Gently toss until everything is coated in the rich garlic butter sauce.
  5. Garnish & Serve: Sprinkle with fresh parsley and serve immediately with extra lemon wedges, crusty bread, or steamed rice.
