1 pound large shrimp, peeled and deveined
1 cup orzo pasta
3 tablespoons unsalted butter
4 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (optional for a kick)
Salt and black pepper, to taste
Juice of 1 lemon
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan (optional but delish)
Lemon wedges, for serving
Instructions
Boil the orzo in salted water until al dente, then drain and set aside.
In a large skillet, heat olive oil and 1 tablespoon of butter. Add shrimp, season with salt, pepper, and red pepper flakes, and cook for 2-3 minutes per side until pink and juicy.
Remove shrimp and melt the remaining butter in the skillet. Add garlic and sauté until fragrant, about 1 minute.
Return shrimp to the pan, toss in the orzo, lemon juice, and parsley, mixing well.
Plate the dish, sprinkle with Parmesan if using, and serve with lemon wedges.
Notes
For a spicier dish, increase the amount of red pepper flakes.
This dish can be made in one pan for easy cleanup.
