  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional for a kick)
  • Salt and black pepper, to taste
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan (optional but delish)
  • Lemon wedges, for serving

Instructions

  1. Boil the orzo in salted water until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil and 1 tablespoon of butter. Add shrimp, season with salt, pepper, and red pepper flakes, and cook for 2-3 minutes per side until pink and juicy.
  3. Remove shrimp and melt the remaining butter in the skillet. Add garlic and sauté until fragrant, about 1 minute.
  4. Return shrimp to the pan, toss in the orzo, lemon juice, and parsley, mixing well.
  5. Plate the dish, sprinkle with Parmesan if using, and serve with lemon wedges.
