1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp garlic butter
1/2 tsp smoked paprika
Salt & black pepper to taste
2 cups cooked jasmine or basmati rice
1 cup steamed broccoli florets
1/2 cup steamed carrots, chopped
1/2 cup steamed cauliflower florets
Optional: parsley for garnish, lemon wedge
Instructions
Steam the broccoli, carrots, and cauliflower until just fork-tender for a nutrient-loaded veggie trio that keeps things colorful and healthy.
In a skillet over medium-high heat, add olive oil and shrimp. Season with smoked paprika, salt, and pepper. Cook for 2–3 minutes per side until golden and juicy.
Drop in that garlic butter during the last minute of cooking and let it coat the shrimp for that buttery, bold flavor explosion.
Reheat or prepare your rice, seasoning lightly with salt and a sprinkle of herbs.
Layer rice, shrimp, and veggies into a deep plate or bowl. Garnish with parsley or a lemon wedge for that fresh, zesty finish.
